This is a whole bottle of water freezing in just a few seconds.
The water has been supercooled - see that before the freezing starts it’s colder than 0 degrees Celsius. Water can get below 0 degrees and stay liquid if it’s pure and very still, as there are few irregularities for ice crystals to start forming on.
When you give it a whack, the ice crystals start to form.
Look at the temperature as the ice forms. It rapidly rises to well above freezing. As the water freezes, bonds are forming. Forming bonds releases energy, which means the area immediately outside the bottle actually warms up, even though the water is freezing at 0 degrees.
